1 cup milk
1 cup diced Silver Creek Turkey Summer Sausage
½ cup sliced mushrooms
½ cup shredded carrots
½ cup chopped sweet peppers
½ cup chopped asparagus
¼ cup green onion finely sliced
¼ teaspoon salt
½ teaspoon black pepper
In a large mixing bowl, combine eggs and milk. Scramble until blended.
Stir in salt and pepper.
Mix in sausage and veggies. (I use raw veggies, but if you prefer to sauté for a few mins in a pan that will work too)
Spray a 12 “cup” muffin pan with cooking spray.
Ladle mixture into prepared muffin pan and bake at 350 for 20 mins or until mixture is firm.
