2 cups Silver Creek Turkey Summer Sausage, cubed
2 cups fresh spinach, chopped
2 cups sweet peppers, diced (I like a mix of red, yellow & green)
1 cup shredded cheese, I prefer sharp cheddar
½ cup black olives, sliced
½ cup cherry tomatoes, sliced
1 Tbsp Italian seasoning
½ cup olive oil
8 oz elbow pasta, or your favorite style
Cook pasta using package instructions. I prefer al dente (boil 7-8 mins)
Drain and rinse with cold water. Pour in large mixing bowl
Blend in sausage, peppers, spinach, olives, tomatoes, and cheese
In a small bowl, combine oil and Italian seasoning. Blend well, pour over salad in the bowl and stir to coat.
Chill and serve
