Serves 6


8 eggs

1 cup milk

1 cup diced Silver Creek Summer Sausage

¼ cup shallots or green onion finely sliced

1 cup steamed broccoli

1 cup mushrooms, sliced

½ cup shredded cheese (I prefer sharp cheddar)

1 teaspoon garlic, minced

½ teaspoon salt

½ teaspoon black pepper


Preheat oven to 350

Combine eggs and milk in a bowl. Scramble until blended.

Stir in salt, pepper, and garlic

Spray a deep dish pie plate with cooking spray.

Place broccoli, sausage, mushrooms, and shallot/onions in the bottom

Pour egg mixture over the top. Sprinkle with cheese.

Place in a preheated oven to bake for about 30 mins. Center should no longer be jiggly. It should be firm.

Serve with fruit and toast if desired.
